Classic Maligny. Mix of riper than expected fruit — pear and white
peach, and a sturdy, drum-like mineral beat. Even two days after
opening, the rock is still there, rhythmically pulsing away. Always one

A bit closed, so at the start, it is all chalk and little fruit. Give
it some air and time, and notes of lemon and apricot begin to show,
alongside a salty chalk note on the finish. Every time I drink one, I
can’t help but think what a wonderful and unique wine is Chablis.
Residual sugar: 1.5 g/L. Serve at 10-12C. Drink now-2018. Food pairing idea: Apéritif, raw oysters, lobster.
